We’re seeking an experienced and dynamic Executive Chef to lead the culinary operations of a high-volume, scratch Italian kitchen. This is a hands-on leadership role ideal for a chef who thrives in fast-paced environments, is deeply passionate about Italian cuisine, and can uphold exceptional food quality and team standards while overseeing busy, service-driven shifts.

Executive Chef Scratch Italian Responsibilities:

  • Lead and manage daily kitchen operations for a high-volume, full-service scratch Italian concept
  • Ensure consistent execution of menu items made from scratch using traditional and seasonal ingredients
  • Act as the lead expeditor during peak service periods to maintain quality, timing, and flow
  • Hire, train, and develop kitchen team members, fostering a culture of accountability and culinary excellence
  • Oversee prep and production to ensure efficiency, consistency, and cost control
  • Monitor food and labor costs, inventory, ordering, and vendor relationships
  • Maintain high standards for cleanliness, sanitation, and food safety across all stations
  • Collaborate with ownership/management on seasonal menu updates and kitchen initiatives
  • Lead by example in professionalism, communication, and service-minded hospitality

Executive Chef Scratch Italian Qualifications:

  • Minimum 5 years of Executive Chef or Chef de Cuisine experience in a high-volume, scratch kitchen
  • Deep knowledge of Italian cuisine and traditional cooking techniques
  • Proven success managing large teams and leading kitchen operations during high-volume services
  • Strong organizational and communication skills, with the ability to lead from the line
  • Hands-on expediting experience with a calm, decisive presence under pressure
  • ServSafe certification or equivalent preferred
